cooking temp & done temp is 275 till center is 165 degrees. I used 1lb ground pork, 1lb of ground round, 1 onion, 1/2 red pepper , 2 eggs, ketchup , Italian bread crumbs. salt & pepper, put 4 slices of pepper jack cheese in the middle, spread gen tso's on the outside before smoking. i take it out wrap it and let it rest for 10 mins before slicing. . made the gravy from the drippings for mashed taters. I use cherry wood chips, you can use what ever you like best.
